OK... you take approximately 2 lbs of beef saute on medium low heat with two chopped onions untill cooked. In meantime cook your corn tortillas in a dab of oil but just enough so they are pliable maybe 3 or 4 seconds each side. Add a can of enchilada sauce to meat mixture and stir well. Place by spoonfuls onto tortillas and roll, make as many as you wish ( we make 40 to 50 at a time ) place in pan seam side down. pour remaining can of enchilada sauce on top of filled pan sprinkle with shredded cheddar or other choice cheese, and bake approximately 15 to 20 min. on 350 just enough to crisp edges. place on plate top with sour cream and fill your tummy. Now I have to go eat some.
