We enjoyed our two days in Amsterdam, and really tried to get in as much as possible. One of the places we visited was a coffee shop by the name of The Bottle. It is one of only a few in Amsterdam where one can buy both alcoholic beverages and smoke. This is where we first tried Absinthe, a liquor which is illegal in most countries, including the U.S. We tried all three proofs, 55, 70, and 80. It was delightful watching the preparation of the drink. First, the bartender placed a spoon over the glass, then placed a sugar cube on the spoon. Second, Absinthe was poured over the sugar cube and allowed to soak in. Third, the sugar cube was lit on fire, dissolving it into the liquor. Lastly, after the flames were out, Absinthe was poured into the glass about a third of the way. Absinthe has a very distinctly licorice flavor to it, since a basic ingredient is Anise.
