Pokeweed's history is incredibly interesting (if you love history). The Poke Weed is an herb and the flowers will develop into dark purple berries. (Birds love to eat them.) Pokeweed berries yield a red ink or dye, once utilized by Native Americans to decorate their horses. The United States Declaration of Independence was written in fermented pokeberry juice; which is why pokeberry may also be called inkberry. Many letters written home during the American Civil War were written in pokeberry ink; the writing in these surviving letters appear brown now.
