This medium sized local fish (by any other name) tastes quite good. Called “mahi mahi” over here in Hawaii, “dorado” in Mexico and “dolphin” by those who think “flipper” is the name of a heavy metal rock band. Dolphins (not flipper) are also used by the Navy on its submarine service logo crest in a stylized way, inspiring sufficient creativity to show dolphins using flippers in Hawaiian waters as mahi mahis.
